Sakizuke
A quiet opening. Sea urchin cream, dashi gelée, and shiso oil — the first breath of the evening.
Sashimi no Mori
Wild-caught selections arranged as a still life. Today's fish, at the peak of their season.
Otoro Nigiri
Bluefin tuna belly, aged 48 hours, pressed by hand on seasoned Koshihikari rice. Nothing more.
Yakimono
A5 Wagyu lightly seared over binchōtan charcoal. Truffle salt, yuzu zest, and a long silence.
Signature Flight
Five pieces of nigiri chosen by Chef Hiro at the height of the evening. Each one unrepeatable.
Kanmi
The evening closes with matcha namelaka and black sesame tuile — bitter, sweet, and complete.

At Sushi Hiro, every piece of nigiri is a meditation. The rice is hand-pressed at the perfect temperature. The fish — sourced daily from Tsukiji-certified suppliers — is cut with intention. Nothing is rushed. Everything is felt.
